It comes from the heart of the pork loin, spicy and tanned with Barolo wine, seasoned wrapped in marc. With its low salt content, it is an excellent delicatessen to be enjoyed alone or in combination with extra virgin olive oil, lemon and Parmigiano Reggiano flakes. Its particularly delicate flavor goes well with the sweet-sour fruit: try it in bundle with pomegranate inside, or with small fruits.
