The Cooked Shoulder is obtained from the homonymous cut.

Smaller and leaner than the thigh, it combines an intense and delicate flavour to an excellent value for money. To taste sliced, it can also be used to prepare delicious meatballs, fillings and fillings. We work it according to the best traditional methods to obtain a single cooked shoulder, both with rind and degreased, with or without the addition of polyphosphates.
